In my quest to eat healthier meals and try new things, I picked up some spicy pork sausages at the store the other day to try out. Originally I had planned on making them into a soup, but was craving a good stir fry so decided to just go for it and made it up as I went!
I started by removing the casings that were on the sausages (I think they tend to be chewy and sorta gross) and browning them in some olive oil and garlic in the pan. When they were mostly cooked I added the carrots because I knew they would take the longest to cook out of all the veggies. I also ended up adding a sweet bell pepper, frozen peas and frozen broccoli.
Everything I used was:
- 4 spicy pork sausages (casings removed)
- 1 tbsp olive oil
- 2 cloves garlic
- 3 carrots
- 1 red bell pepper
- 1/2 cup peas
- 1.5 cups broccoli
- 2 tbsp stir fry sauce
I also cooked a small pot of jasmine rice to eat with it and then covered my bowl with fresh ground pepper (I loooove black pepper).
Once everything was in the pan I put the lid on and let it do its thing for about 10 minutes stirring it twice during this time. Then it was time to eat! Overall, this was simple and quick and tasted delicious!
